Amy’s Flavour of the Month June 2010

Every month I will be giving you a list of things that I can’t get through the month without….

Elderflower Cordial Time!

Amy’s Elderflower Cordial

10 -12 perfect elderflower heads
900g golden caster sugar or 450g soft brown sugar and 450g caster sugar
30g citric acid from the chemist
The peel and juice of 1 ½  organic lemons
(use a potato peeler to remove the peel from the lemons)
700ml Still mineral water.

Boil the water in a stainless steel pan, remove from the heat and stir in the sugar.  Cover with a clean tea towel and leave to cool.

When the water is cool stir in the elderflower heads, lemon juice and peels and citric acid.  Cover with a clean tea towel and leave for 24 hours in the fridge, stirring occasionally.  Strain through a muslin lined sieve then decant  into sterilized bottles and seal.  Dilute to taste with sparkling or still mineral water and serve with ice.
