Game On: Sea Bass
Summer eating is fantastic and easy. Fantastic because
so much of it is fresh and can be eaten cold and easy because
it can be thrown on to a smoking hot B-B-Q! This month’s recipe
can easily be cooked on a B-B-Q in the foil. One thing that always
amazes me when I see people cooking on a B-B-Q is that they forget
to put a table next to it sounds obvious I know, but …. A great
way of serving half a lemon or lime with fish is to cut it in
half, brush with some olive oil and put the cut side down straight
on to the bars of the B-B-Q so that you get a charred look to
the lemon it also releases its citrus aroma.
Recipe:
Sea Bass Baked in Foil
When you catch sea bass yourself it is divine!
To be honest I fillet the sea bass as it is easier
in the long run and no body eats the heads and tails anyway! All
quantities to suit amount of fish you are cooking.
1 sea bass fillet per person,
Butter
Salt and pepper
Limes
Put a shallow baking tray into a pre heated oven
(190-200c) to heat up.
Tear off a longish piece of foil big enough to wrap the fish in.
You can do individual parcels or one big one. Smear some butter
over the bottom of the foil and lay the fish on to it skin side
down. Season with salt and pepper and a squeeze of lime juice.
Wrap up the fish and remove the now hot baking tray form the oven
and lay the fish on to it. Slide the tray into the oven and cook
the fish for 8-10 minutes or until it is done. I cannot stress
how awful over cooked fish is!
Serve with the foil juices on a watercress salad.
