Last
year I had a wonderful tea party in the garden and was so lucky
with the weather that I am doing it again which of course means
it will rain! Tea time is the highlight of my day. We, horror
of horrors, use bags – it’s just easier and even different pots
for different bags. I do like plain old bog standard tea but I
have become fond of the fresh herb and flower infusions that come
with the summer months. The Japanese use glass pots and kettles
for their teas as it is supposed to leave no taint on the water
or teas but I think they just look fabulous. The easiest tisane
is a sprig of mint or lemon verbena the smell alone will transport
you to a warm grassy summer garden. Roll on those lazy crazy hazy
days of summer….
Strawberry Sandwiches
This is a guide rather than a recipe.
Use organic white bread to make the sandwiches some how brown
just doesn’t seem right. Slice some *organic strawberries and
marinate them in organic elderflower cordial for about half
an hour. Drain reserving the cordial to make a long cool drink.
Slice the bread and spread it with clotted cream be generous!
Lay the strawberries on the cream and then top with another
slice of bread. Cut the crusts off and eat!
*strawberries are like little sponges so be sure to pick only
organic ones or ones you know the provenance of.
Tip:

Japanese green teas and Indian teas. If you can’t make it to
